A rich, sweet mixture of berries in a vanilla cheesecake. A local farmer harvests the best berries here, including the golden raspberries. If you can find them, they are great for baking. Ingredients:

1 pint blackberries |
1 pint blueberries |
1 pint mixed raspberries |
2 pounds philly cream cheese, softened |
1 1/4 cup sugar |
4 tbsp. flour |
5 large eggs |
1 1/2 tea. vanilla extract |
1/2 cup heavy cream |
Directions:
1. Rinse berries, let dry. 2. Preheat oven to 500^. 3. Blend cream cheese, sugar and flour until smooth. 4. Add eggs one at a time. 5. Add vanilla and cream, mix thoroughly. 6. Layer berries evenly in prepared pan. 7. Pour filling over berries. 8. Bake at 500^ for 15 minutes. 9. Reduce temp. to 250^ and continue baking for 1 hour. 10. Let cool and refrigerate before serving. |
