Baked beans are a favorite of Bryan's, so I am always looking for something different. This is from one of those mad scientist days when we had a crowd, and I was trying to make them go farther. Everyone loved them, and they request them often. Ingredients:
8 slices bacon |
1/4c bacon drippings |
2 t cornstarch |
1 t chili powder |
1/2 t cumin |
1/2 small white or yellow onion, chopped small |
*chopped green pepper, optional |
3-6 drops tobasco |
1/2c water |
2 - 16 oz cans bush's original baked beans |
2 - 16 oz cans chili beans |
1 - 16 oz can texas ranch beans |
Directions:
1. Preheat oven to 350 2. Fry bacon in skillet until crisp 3. Lay on paper towel to drain 4. Crumble bacon and set aside 5. Reserve1/4 c bacon drippings and discard the rest 6. Return 1/4 c drippings to pan 7. Saute onion, and peppers if using 8. Add remaining ingredients except beans 9. Simmer over medium heat, stiffing until thick and bubbly 10. Add beans and half the crumbled bacon 11. Mix well 12. Pour into 2 qt casserole 13. Bake 25 minutes 14. Top with remaining bacon and bake and additional 5 minutes |
