When I made the Double Apple Bundt Cake I found here on RecipeZaar (#255105), I wound up making so many substitutions, it seemed the cake I actually took to church deserved a recipe listing of its own. Hope you enjoy it as much as my Liturgists group did! Ingredients:
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
1/4 teaspoon nutmeg |
1/4 teaspoon ground ginger |
1/4 teaspoon ground cardamom |
1/4 teaspoon salt |
1 cup applesauce |
1 1/2 cups sugar |
1 teaspoon vanilla extract |
1/2 cup egg substitute (or 2 large eggs) |
1 cup apple butter |
2 medium apples, peeled, cored and sliced |
1 cup pecans (optional) or 1 cup walnuts, chopped (optional) |
1/2 cup plump moist raisins (optional) |
Directions:
1. Preheat oven to 350 degrees F. 2. Grease and flour a 9-10 inch bundt pan. 3. Sift together dry ingredients. 4. Beat together apple sauce, sugar, vanilla and eggs, one at a time (or 1/4 cup at a time, if using egg substitute), about 1 minute after each addition, until batter is light and fluffy. 5. Reduce mixer speed to low and beat in apple butter, followed by dry ingredients. 6. Fold in apple slices, then nuts and raisins, if using. 7. Turn batter into prepared bundt pan. 8. Bake 55-65 minutes, checking for doneness with toothpick or thin knife. |
