Hi, everyone I got this idea from watching top chef “ceviche” is one of the traditional recipes of South America and many Spanish cultures. This wonderful recipe is adapted from my friend Annie or Berry, as you know her she is an exceptional chef from Columbia ware ceviche is served in many family homes. Read more . Ceviche is marinated in a citrus-based mixture, with lemons and limes being the most commonly used.
Ingredients:
1 lb shrimp (cleaned and deveined)
1 fire roasted red pepper in thin strips
1 medium red onion chopped
2 garlic cloves minced
1 medium red and one medium green tomato
1-cup lemon juice
1 cup orange mango juice.
3/4 cups ketchup
1/4 cup of my bbq sauce habenero chipotle barb q sauce
bunch of cilantro
salt and fresh ground black pepper
Directions:
1. Roast Red Bell Pepper peel and slice into strips.
2. Boil water add the shrimp for 20 seconds until they are color pink.
3. Remove the shrimp and shock them in a cold water and ice cube bath.
4. Drain the water and place shrimp in a large bowl and add onion, pepper, tomato, pepper, orange mango juice, lemon juice, garlic cloves, salt, pepper, ketchup, BBQ sauce and cilantro.
