Tried and True Muffins (Apple or Banana) |

From my Middle School. We made them with apple in school and at home I made them with a banana instead. Ingredients:
1 egg |
1/2 cup milk |
1/4 cup oil |
1 bananas, mashed or 1 apple, peeled, cored and chopped |
1 1/2 cups flour |
1/2 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
Directions:
1. Preheat oven to 400 degrees F. 2. Line or grease a 12 muffin tin. 3. In a medium size bowl, beat the egg with a fork and add the milk, oil and either the banana or apple. 4. In a large bowl, blend the dry ingredients together. 5. Make a well in the center of the dry ingredients then add the wet ingredients into the well and stir with a fork until just moistened-DO NOT OVERMIX. 6. Fill the prepared muffin cups 2/3 fill and bake for 15-20 minutes, until golden brown. 7. Cool on a rack before eating. |
