Tricolor Tomato Salad

Individual layered salads that make a lovely presentation. Sour cream is infused with lime flavor and can be made ahead for a more intense flavor. Serve in margarita glasses to impress.
Ingredients:
1 tablespoon fresh lime juice (about 1 lime)
1/2 teaspoon lime zest (about 1/2 lime)
1/8 teaspoon cayenne pepper
1 cup sour cream
1/4 teaspoon salt (to taste)
8 roma tomatoes, cored and chopped into chunks and then drained
8 ounces basil pesto, at room temperature
3/4 cup pine nuts, toasted and chopped
4 sprigs fresh basil, for garnish
Directions:
1. In a small bowl, combine the lime juice, zest, cayenne, sour cream and salt; cover and refrigerate 4 to 6 hours.
2. Arrange tomato chunks in 4 footed margarita glasses or small, clear dessert bowls.
3. Spoon a thin layer of pesto over each, spreading it to the edges so it shows through the outside of the glass.
4. Spoon desired amount of sour cream mixture over and spread out to edges.
5. Garnish with toasted pine nuts and a sprig of fresh basil.
