Ingredients:
1 cup water |
1/2 cup fresh or frozen green peas |
1/4 cup plain low-fat yogurt |
1 1/2 teaspoons prepared horseradish |
1 1/2 teaspoons white vinegar |
1/8 teaspoon salt |
1/8 teaspoon pepper |
2 cups diced red delicious apple |
2 cups torn radicchio |
1/2 cup vertically sliced red onion |
1/3 cup diced bottled roasted red bell pepper |
Directions:
1. Bring water to a boil in a small saucepan. Add peas; cook 1 minute. Drain and set aside. 2. Combine yogurt, horseradish, vinegar, salt, and pepper in a large bowl; stir well. Add peas, apple, and remaining ingredients; toss well. |
