Great with a afternoon tea or Coffee! I acquired this wonderful recipe from a friend and wanted to share this with all who love Tarts! Enjoy! :) Ingredients:
1 cup sugar |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 1/2 teaspoons ginger |
1 cup pumpkin puree (fresh or canned) |
1 cup half and half |
2 eggs, lightly beaten |
1/4 cup brandy |
pre-made pie crust |
fresh whipped cream to garnish |
individual tart pans |
Directions:
1. In a large bowl combine all the pumpkin custard ingredients. Whisk until well blended. 2. Split the pie crust between six to eight 4 non-stick tartlette pans. 3. Press the crust onto the bottom and sides of the pans. 4. The crust will shrink a little while baking so make sure it reaches the top edge of the pan. 5. **I find that one pre-made pie crust is the perfect amount for six tartlettes.** 6. Fill the individual crust lined tartlette pans with the pumpkin custard and bake at 350 degrees F for 20 to 25 minutes or until set. 7. Remove from the oven and cool. 8. **Once cool, you'll find that you can pop them out of the pans. Although, you may have to run a knife along the edges to loosen them first.** 9. Top with fresh whipped cream and serve. |
