This dish comes from an old cookbook called Arkansas Farm Favorites. Ingredients:
6 medium potatoes |
3 carrots |
2 lbs sausage (can use 1 lb mild and 1 lb. hot) |
1 green pepper |
1 large onion |
1 (8 ounce) can mushrooms |
2 (10 ounce) cans tomatoes |
1 tablespoon worcestershire sauce |
black pepper |
1/2 teaspoon oregano |
2 tablespoons parsley flakes |
mozzarella cheese |
Directions:
1. Dice and cook carrots and potatoes in boiling wateruntil barely tender;drain. 2. Fry sausage, breaking into pieces. Remove fat as it accumulates. Dice green pepper and onion. Add with drained mushrooms to sausage. Add tomatoes, worcestershire sauce, black pepper, oregano and parsley. Simmer for 15 minutes. Combine with carrots and potatoes in a casserole. Sprinkle liberally with cheese; put in oven at 450°F for 20 minutes. |
