An extremely light and flavorful chowder. Traditional style, thin (no flour added) and deeeelicious! Ingredients:
2 cups clams |
16 oz clam juice |
1 1/2 ounce bacon, chopped into pieces |
1 cup onion, chopped |
1/2 cup celery, chopped |
1 1/2 tsp butter |
2 cups potato, chopped |
1 tbsp thyme |
1 tbsp bay leaf |
12 oz fat free evaporated milk |
5 oz evaporated milk |
1 1/2 cup milk |
50 g sherry (about 2 tbsp) |
Directions:
1. Cook the bacon over medium heat until crispy. 2. Drain the fat except for 2 tsp. 3. Add the onion, celery and bacon into the pan and cook until the vegetables are soft, about 5 minutes. 4. Add the clam juice, thyme, bay leaf and potatos and simmer over low heat about 15 minutes. 5. Add the evaporated milks, 1% milk, sherry and clams. 6. Simmer at least 15 minutes, the longer the better. |
