A beautiful array of colors and great taste. Make these a month ahead and take to a Thanksgiving feast or to give as Christmas gifts. Recipe and photo from Fresh magazine. Must rest a minimum of 24 hours Ingredients:
1 c plus 2 tbl red or white wine vinegar |
1 c plus 2 tbl water |
4 tsp sugar |
1 1/2 tsp kosher salt |
1/2 c thinly slice red onion |
1 c cut green beans |
1 c cauliflower florets |
1/4 c fresh basil leaves |
3 garlic cloves, peeled |
1 tsp mixed color peppercorns |
1 dried chile de arbol pepper (optional) |
1 c thin red bell pepper strips (about 1/2 pepper) |
Directions:
1. In a medium saucepan, heat vinegar, water, salt, and sugar over high heat. 2. Bring to a boil, stirring to dissolve sugar and salt 3. In a 1 quart container, layer vegetables and seasonings in this order: 4. red onions 5. green beans 6. cauliflower 7. basil 8. garlic 9. peppercorns 10. chile pepper, is using 11. and red bell pepper 12. Pour hot brine over vegetables 13. Let pickles cool to room temperature, about 2 hours 14. Cover and refrigerate for 24 hours to develop flavors 15. Keep refrigerated 1 month |
