Mayo makes the cake soooooo moist . And the filling is quite contemporary . 2 1/4 c flour , 1 c cocoa pwd , 2 1/4 tsp baking soda , 1 1/4 tsp baking pwd , 1/2 tsp salt and 1/2 tsp cinnamon pwd - sifted |
2 1/2 oz chocolate |
1 c milk |
1 1/4 c hot strong coffee |
1 c mayo ( real stuff and not the salad dressing or low fat one ) |
2 eggs |
1 1/2 tsp vanilla |
2 1/4 c or abit less sugar |
white mousse |
whip 1 egg white and 1 tbsp sugar ina bowl . |
melt 4 oz white chocolate with 1/4 c cream over double boiler . |
cool , whisk and pour into the egg white . |
add 3/4 c chilled cream with it and beat until soft peaks form . |
yogurt chocolate icing |
melt 12 oz dark chocolate with 4 oz butter , 2 tbsp golden syrup . |
whisk along with 1/2 c yogurt and keep it smooth . |
Directions:
1. Pre heat oven at 180 deg C . 2. Grease 3 - 8 inch pans . 3. ............................................ 4. Mocha : 5. Simmer the milk and pour it over the chocolate along with the HOT coffee . 6. Whisk until smooth . 7. Set aside . 8. ............................ 9. Beat the eggs , mayo , vanilla . 10. Add the sugar slowly . 11. Alternately add the mocha and dry ing . 12. Beat until smooth and well mixed . 13. Pour in 3- 8 inch greased baking pan and bake for 25 to 30 mins . 14. Leave it in the pan for awhile and turn it . 15. Cool completely . 16. ........................................... 17. Assemble : 18. Place a cake layer on serving plate . 19. Spread half of the the mousse evenly . 20. Repeat the next layer by spreading the mousse evenly . 21. Place the third layer and spread half of the of the dark yogurt icing over the top and sides . 22. Chill 30 mins . 23. Cover the cake with rest of the icing . 24. Serve . 25. ............................................. |
