Traditional Curried Green Beans |

From 'The Kellerprinz Braai book' found in a charity shop - on the inside cover it says 'To Herbert, hoping this reminds you of us, SA, sunny skies, braais, rugby and chevrolet' - how wonderful! Ingredients:
1 kg green beans, sliced |
500 g onions, sliced |
12 1/2 ml oil |
500 ml water |
5 ml coarse salt |
375 ml apple cider vinegar |
250 ml treacle sugar |
5 ml curry powder |
12 1/2 ml cornflour |
10 ml mustard powder |
salt and pepper |
Directions:
1. Saute onions in oil til glossy. 2. Add beans and mix. 3. Add salt and water, cook for about 15 minutes or until beans are just tender. Drain. 4. In the meantime, mix vinegar and sugar in another pot and stir till sugar is completely dissolved. 5. Mix dry ingredients, softened with a little water, add to sugar/vinegar mixture. Stir thoroughly and cook for 10 minutes. 6. Add cooked beans, simmer for further 10 minutes. 7. Serve either hot or cold or bottle and keep in the fridge - they keep well and improve with age. |
