Traditional Cupcakes With Passionfruit Icing |

Yummy! Ingredients:
150 g butter, cubed |
1/2 cup caster sugar |
1 teaspoon vanilla essence |
2 eggs, beaten |
2/3 cup sour cream |
1 1/3 cups self-raising flour |
125 g butter |
2 tablespoons passion fruit pulp |
1 1/2 cups icing sugar |
Directions:
1. Preheat oven to 180°C Prepare 12 cup muffin pan lined with patty cases. 2. Beat butter and sugar until pale. 3. Beat in vanilla essence and eggs. 4. Fold in sour cream and sifted flour. 5. Spoon mixture into cases and bake for 25 minutes. 6. Allow to cool. 7. To prepare icing just beat all ingredients together. 8. Spread over cooled cupcakes. |
