Traditional 4 Cheese Manicotti |

Yumm... Ingredients:
8 ounces manicotti |
1 tablespoon vegetable oil |
15 ounces ricotta cheese |
16 ounces cottage cheese |
1 cup mozzarella cheese, grated |
1/3 cup parmesan cheese, grated |
1 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon parsley |
2 eggs |
2 1/2 cups spaghetti sauce |
Directions:
1. Boil manicotti according to pkg directions, adding oil to water so they don't stick. 2. Meanwhile, mix all cheeses, salt, pepper, parsley and eggs. 3. Drain manicotti; run cold water over it. 4. Preheat oven to 350. 5. Stuff each manicotti with cheese mixture. 6. Place them in a 3 qt casserole after treating with nonstick spray, pour sauce around and over the manicotti. 7. Cover and bake for 45 minutes. Uncover and bake for another 15 minutes. |
