This is my version of a friends salsa recipe. I added the garlic and cilantro. It's so fresh tasting even though it's canned. Very versatile salsa Ingredients:
2-3 gallons tomatoes, blanched, peeled and seeded |
1 gallon chopped peppers (use any combination of hot/sweet) |
3 large bunches of green onions, sliced (including some green parts) |
2 heads of garlic, peeled and chopped |
1 bunch of cilantro chopped (about 2 cups) |
3 cups cider vinegar |
3 tablespoons salt (i used canning/pickling salt) |
1/2 cup olive oil |
Directions:
1. Chop the tomatoes, either by hand or in a food processor. 2. Combine all ingredients in a large pan or 2 smaller ones and bring to a boil, let boil about 5 minutes. 3. Ladle into clean quart jars, cover with lids and rings and process 10 minutes in a hot water bath. |
