This is a slaw like you have never tasted. Not drippy or mayonnaisey but crunchy and fresh, with a surprising sweetness from the raisins. My nephew turned me on to this one... Ingredients:
3/4 cup golden raisins |
1/4 cup red wine vinegar |
3 tbs whole-grain mustard |
1 tbs sugar |
1/4 cup grapeseed oil (or sunflower) |
2 tbs walnut oil |
salt, freshly ground black pepper |
1/2 medium head of green cabbage, shredded (about 8 cups) |
1 large carrot, peeled and shredded |
1/2 small red onion, thinly sliced crosswise |
1/4 cup snipped chives or sliced green onion |
Directions:
1. In small bowl, soak raisins in hot water for 10 minutes; drain well. 2. Meanwhile, in a large bowl, whisk the vinegar with the mustard and sugar. 3. Whisk in the oils and S&P. 4. Add cabbage, carrot, onion, chives and raisins and toss well. 5. Adjust S&P after tasting and toss again. 6. Chill well before serving. |
