Quick, low fat, low calorie lunch salad. Ingredients:
1 can 5 oz chunk light tuna, drained |
1 tbsp (+/-) balsamic vinegar |
1 tsp fresh lemon juice |
1 tsp lemon zest |
1 tbsp capers |
salt & pepper to taste |
1 cup lettuce, shredded into smaller pieces |
1/2 medium tomato, cut in half and sliced |
1/2 medium cucumber, peeled and sliced and re-sliced into halve |
Directions:
1. Mix tuna and next five ingredients. 2. Spoon tuna salad over lettuce, tomato and cucumbers. 3. Lightly toss all ingredients and serve. |
