Another very healthy and delicious salad - a great one to serve with your ladies group coming for lunch - Ingredients:
2 eggs |
1/2 cup sugar |
1/4 cup water |
1/4 cup vinegar |
1/4 teaspoon dry mustard |
fresh ground pepper |
2 (6 ounce) packages fresh tender spinach leaves, torn in bite-size pieces |
1 (8 ounce) package fresh mushrooms, sliced |
3 celery ribs, sliced |
2 medium tomatoes, cut into wedges |
1 cucumber, sliced |
1 lb boneless skinless chicken breast, grilled and sliced |
8 hard-cooked eggs, cut into wedges |
Directions:
1. Beat 2 eggs with sugar and water in a microwave-safe medium bowl. 2. Microwave on high for 1 minute. Stir in vinegar, dry mustard and pepper; microwave on high for 1 1/2 - 2 minutes, whisking at half time during cooking. Set aside. 3. Toss spinach with mushrooms, celery, tomatoes and cucumbers. 4. Divide among 6 dinner plates. Top with an equal amount of chicken slices and egg wedges. 5. Drizzle with warm dressing. |
