Refreshing and tasty side salad or light lunch. Ingredients:
1 tb each apple cider vinegar,mayonnaise and greek yogurt |
1 tsp finely minced garlic |
2 limes zested and juiced |
2 ripe avocados,halved,pitted and thinly sliced |
2 c torn green-leaf lettuce |
2 ripe tomatoes,cut in wedges |
1/2 c thinly sliced red onion |
2 oz pepper-jack cheese,cubed |
Directions:
1. In bowl,whisk together vinegar,mayo and yogurt,garlic,2TB lime juice and 1/4 tsp zest. 2. Sprinkle avocado slices with 1 Tb lime juice 3. Arrange avocado slices,lettuce,tomatoes,onions, and cheese on platter. Drizzle with dressing. |
