Great recipe for groups and potlucks Ingredients:
3/4 cup large leaf italian basil, chopped |
3 cups ripe grape tomatoes, halved |
16 ounces fresh mozzarella cheese |
3/4 cup sun-dried tomato, chopped |
3/4 cup kalamata olive, chopped |
4 tablespoons extra virgin olive oil |
3 tablespoons balsamic vinegar |
2 teaspoons sugar |
1/4 teaspoon salt |
1/4 teaspoon coarse ground pepper |
Directions:
1. Combine in salad bowl, grape tomatoes, fresh mozzarella, basil leaves, sun-dried tomatoes and kalamata olives. 2. Prepare dressing in a separate bowl. 3. Whisk together oil, pepper, sugar & salt. 4. Drizzle the vinegar into the mixture and whisk again. 5. Add the dressing to the salad. 6. Toss salad then serve. |
