Copycat of Olive Gardens Toscana Zuppa. Can be made with Hot Italian Sausage also. Whipping cream or half and half can be used in place of evap. Ingredients:
1 lb sweet italian sausage, broken into bite size pieces |
1 lb red potatoes, sliced 1/4-inch thick (use small ones) |
3/4 cup onion, diced |
6 slices bacon |
1 1/2 teaspoons garlic, minced |
2 cups kale, cut in half and then sliced thinly |
3 teaspoons chicken base |
6 cups water |
1/2 cup evaporated milk |
Directions:
1. Brown sausages and set aside. 2. Bake bacon and set aside. 3. Put bacon grease in pot and brown onions in it until almost clear, about 5 minutes over medium heat. 4. Add garlic and cook 1 minute. 5. Add chicken base, water and potatoes. Simmer 15 minutes. 6. Add bacon, sausage, kale and evaporated milk. Simmer 4 minutes and serve. |
