I got this from some magazine and have added and adapted it, so feel free to add or subtract what sounds good to you! Ingredients:
1 lb ground beef |
1 (15 1/4 ounce) can black beans |
1 (15 1/4 ounce) can corn, drained |
16 ounces salsa |
corn tortilla |
1 cup shredded cheddar cheese |
mexican rice |
sour cream |
lettuce |
tomato |
Directions:
1. Pre-Heat Oven to 350°F. 2. Cook and drain hamburger meat. 3. Cook mexican rice per directions on package. 4. Mash beans (unless prefered whole). 5. Add corn and salsa to beans. 6. Spray casserole dish with non-stick spray. 7. Place tortillas on the bottom. 8. Continue layering meat, bean mixture, rice, and cheese. 9. Then tortillas etc. until you end with cheese on top 10. Bake until cheese is melted and layers are hot/warm. 11. Top with sour cream, tomatoes, and lettuce as desired. |
