A spicy chicken soup thickened with tortilla for a wonderful Mexican taste Ingredients:
2 cups cooked chicken (chopped) |
4-5 cups chicken broth |
1 can stewed tomatoes |
1 can rotel tomatoes (or 1/2 cup salsa) |
1 can whole kernel corn |
2-3 corn tortillas (diced or torn in small pieces) |
1/2 large onion (diced) |
1 tablespoon cilantro |
1 can chopped chili peppers |
1/2 teaspoon cumin or chili powder |
dash of cayenne pepper (optional) |
1-2 cloves garlic |
Directions:
1. Saute gralic, onions, tortillas and cilantro. 2. Add chicke, broth, corn, tomatoes and spices. 3. Bring to a boil. 4. Reduce heat and simmer to reduce to desired thickness. |
