This recipe is based off of Pappasito's Cantina's recipe for tortilla soup. Ingredients:
12 cups chicken broth |
2 cups white onion |
1 cups carrots |
3 cups zucchini |
3 cups squash |
1 cups kernel corn |
2 tablespoons salt |
2 cups stewed tomatoes |
2 pepper, jalepenos |
Directions:
1. In a large pot, bring chicken broth, carrots and onion to a boil. Cook until carrots are tender. 2. Add sliced zucchini, sliced squash, corn, tomatoes, diced jalepeno and salt. 3. Reduced to a simmer and cook until vegetables are tender. Remove from heat and let cool until desired temperature. |
