Healthy, quick, easy and delicious. Ingredients:
1/4 chopped onion |
2 minced garlic cloves |
1 tablespoon olive oil |
1 -2 tablespoon chili powder |
1 -2 tablespoon cumin |
1 (14 1/2 ounce) can diced tomatoes |
2 cups water |
16 -20 ounces chicken broth |
1/2 cup salsa |
1 cup frozen corn |
1 (15 1/2 ounce) can kidney beans |
cilantro (optional) |
1 chicken |

Directions:
1. Roast, grill, cook in slow cooker, or purchase rotisserie chicken. Saute onion and garlic in olive oil. Add chili powder, cumin, tomatoes, water, broth and salsa. Heat for about 30 minutes. Add corn, beans, cilantro and shredded chicken, and simmer about 30 minutes. Serve with baked tortilla strips. |
