This is a quick easy meal that can be as spicy or mild as you chose! It's a one pot meal that anyone can throw together and it's very satisfying! It's nothing close to authentic mexican food, but it's quick easy and delicious! Ingredients:
1 tablespoon olive oil |
1/2 cup diced onion |
1 teaspoon red pepper flakes (optional) |
1 teaspoon cumin |
1 teaspoon black pepper |
7 ounces diced green chilies |
2 (14 1/2 ounce) cans of s & w diced tomatoes (with green chilies and spices) |
1 (15 1/4 ounce) can reduced sodium corn |
1 (15 ounce) can reduced sodium black beans (rinsed) |
1 (15 ounce) can chili beans |
3 cups reduced-sodium chicken broth |
1 (12 1/2 ounce) can canned white meat chicken |
1 ounce ranch dip mix |
1 ounce reduced sodium taco seasoning |
1 cup instant rice |
Directions:
1. Heat oil in a stock pot, sautee onions 2-3 minutes. 2. Add red pepper flakes, cumin, black pepper and chilies to pan cook 1 minute. 3. Add all other canned ingredients to the pan bring to boil cook 10 minutes (do not drain the canned ingredients) 4. Add rice, simmer 2 minutes, turn off burner, but leave pan on hot burner. Cover pan for 5 mintes or until rice is done. 5. Enjoy! |
