Ingredients:
1 cup carrot, diced |
1 cup celery, diced |
1 cup onion, diced |
2 tablespoons olive oil |
8 cups chicken stock |
15 ounces petite diced tomatoes with green chilies |
1 teaspoon chili powder |
1/2 teaspoon dried chipotle powder |
1/4 teaspoon oregano |
1/2 teaspoon cumin |
15 ounces black beans, drained and rinsed |
16 ounces frozen sweet white corn |
10 corn tortillas, cut into pieces |
1 cup cooked chicken, diced |
1 cup milk |
Directions:
1. Saute onions, carrots, and celery in olive oil. 2. Add chicken stock, tomatoes, spices, beans, corn, and tortillas. Bring to boil and reduce to simmer for 20 minutes. 3. Add chicken and milk. Reduce heat and simmer for 10 minutes. Garnish with cheddar cheese. |
