This recipe comes from Momma Pat's cookbook. It is very good with chicken added, but I am adding it here as is, just with beans. Ingredients:
6 cups water |
1 (28 ounce) can crushed tomatoes |
1 (1 1/4 ounce) package onion soup mix |
1 (16 ounce) can black beans, drained and rinsed |
1 (16 ounce) can red beans, drained and rinsed |
1 (16 ounce) can garbanzo beans, drained and rinsed |
1 (10 ounce) package frozen corn |
1 (4 ounce) canned diced green chiles |
1 teaspoon chili powder |
1 teaspoon cumin |
2 tablespoons canola oil or 2 tablespoons olive oil |
1 cup tortilla chips (crushed) |
chopped green onions or sliced avocados or chopped fresh tomatoes or low-fat sour cream or shredded cheddar cheese or monterey jack cheese |
Directions:
1. Place all ingredients up to the crushed tortilla chips in a large pot and bring to a boil. 2. Add tortilla chips, mix cover, turn off heat, and allow to rest for about 10 minutes, or until chips have dissolved in the soup. Serve with garnishes. |
