Yummy stew version of the Texas favorite King Ranch Casserole. Good to warm you up on a cold day! Ingredients:
1 cup onion, chopped |
1 cup green bell pepper, chopped |
1 cup red bell pepper, chopped |
1 cup celery, chopped |
1 cup whole kernel corn |
1 can low-fat cream of celery soup |
1 can 98% fat-free cream of chicken soup |
2 (10 ounce) cans chicken, do not drain |
1 can rotel |
1 clove garlic, minced |
2 tablespoons chili powder |
2 cups water |
12 corn tortillas, torn into pieces |
Directions:
1. Saute onions, peppers, celery and garlic in nonstick skillet. 2. Add corn, soups, chicken, rotel, chili powder and water. 3. Heat thoroughly. 4. Add tortillas and serve. |
