Ingredients:

3c tomato sauce |
2c chicken broth |
2 dried chipotle chilis, chopped fine |
3 cloves garlic, minced |
2.5t chili powder |
1.5t cumin |
1/2t salt |
1/4t pepper |
other ingredients |
12 small corn tortillas |
1 lb hamburger or cubed chicken |
1t oregano |
1.5c diced onion |
generous pinch of salt |
2 lb jack cheese, shredded |
Directions:
1. Preheat oven to 350 2. Combine sauce ingredients in saucepan and bring to a boil over med-high heat 3. brown hamburger or saute chicken for 7-9 minutes; drain. 4. remove meat from pan 5. saute onions and salt 4-6 minutes 6. add garlic, oregano, and meat. mix and cook a few more minutes 7. In a 9x13 pan, layer sauce, then tortillas dipped in the sauce first (3 whole and 2 halves to cover), meat, then cheese. Repeat for 3 layers. 8. Cover and bake for 30 minutes, then uncover and bake 10 more minutes. 9. Let sit 5 minutes before serving. |
