Tortellini With Creamy Bacon Sauce |

This is one of our family favorites. Ingredients:
1 lb tortellini (any flavor) |
1 1/2 tablespoons olive oil |
4 slices bacon, chopped |
4 green onions, chopped |
1/4 cup sun-dried tomato packed in oil, drained,chopped |
1/2 cup cream |
1/2 cup sour cream |
1/4 cup water |
1/2 cup grated parmesan cheese |
1 1/2 tablespoons chopped fresh basil |
Directions:
1. ADD pasta to large pan of boiling water; Boil uncovered until just tender; Drain. 2. HEAT oil in pan, add bacon; Cook, stirring until bacon is crisp; Add onions and tomatoes; Cook stirring until onions are just tender; Remove and reserve half the bacon mixture for serving. 3. STIR cream, sour cream, water, cheese and basil into remaining bacon mixture in pan; Stir until heated through. 4. COMBINE tortellini and cream mixture; Toss well; Serve sprinkled with reserved bacon mixture. |
