soup Ingredients:
1 tablespoon olive oil |
1 cup carrot, sliced |
1/2 cup onion, chopped |
1/4 cup celery, chopped |
1 garlic clove, minced |
3 (14 1/2 ounce) cans chicken broth |
1 (14 1/2 ounce) can cream of chicken soup (optional) |
9 ounces cheese-filled tortellini |
2 cups spinach, fzn cut-leaf |
1/2 teaspoon dried oregano leaves, crushed |
1/2 cup mozzarella cheese, shredded |
Directions:
1. -saute carrots, onion, celery, and garlic until onion is tender. 2. -add broth; bring to a boil. 3. -add tortellini; boil gently 4-5 minutes. 4. -add spinach and oregano; simmer 2-3 minutes. 5. sprinkle each serving with mozzarella. |
