Tortellini Spinach Casserole |

it sounded so good and easy that I had to try it. Ingredients:
2 packages (10 ounces each) frozen cheese tortellini |
1 pound fresh mushroom, sliced |
1 teaspoon garlic powder |
1/3 teaspoon onion powder |
1/4 teaspoon pepper |
1/2 cup butter, divided |
12 ounce can evaporated milk |
8 ounces bar cheese, cubed |
3 packages (10 ounce) frozen chopped spinach, thawed and drained well |
2 cups mozzarella cheese, shredded |
Directions:
1. Cook tortellini according to package directions. 2. Preheat oven to 350 degrees F. 3. In a large skillet, saute the mushrooms, garlic powder, onion powder and pepper in 1/4 cup of the butter until mushrooms are tender. 4. Remove from pan and keep warm. 5. In the same skillet, combine the milk and remaining butter. 6. Bring to a simmer. 7. Stir in bar cheese (I usually use extra-sharp cheddar). 8. Cook and stir until smooth. 9. Drain tortellini and place in a large serving bowl. 10. Stir in the mushroom mixture and the spinach. 11. Add cheese sauce and toss to coat. 12. Transfer to a greased 3-quart baking dish. 13. Sprinkle with mozzarella cheese. 14. Cover and bake for 15 minutes 15. Remove cover. 16. Bake 10 minutes more OR until heated through. |
