This is a recipe I obtained from one of the estate sales I attended several years ago. I made it since I am a huge fan of hearty soups and it is now a mainstay in my home. My husband and I both love this delightful dish and we hope you do to. Ingredients:
1 pound italian sausage with casing removed crumbled |
3 large zucchini sliced |
1 green pepper diced |
1 white onion chopped |
1 clove garlic minced |
1/2 teaspoon oregano crushed |
2 cans chicken broth |
28 ounce can italian plum tomatoes |
6 ounce can tomato paste |
8 ounce can tomato sauce |
1-1/2 pounds fresh tortellini |
freshly grated parmesan |
Directions:
1. In large saucepan over medium high heat cook sausage, zucchini, pepper, onion, garlic and oregano until sausage is cooked. 2. Stir to separate meat. 3. Add remaining ingredients and bring to a boil. 4. Reduce heat then cover and simmer 15 minutes. 5. If necessary add a little water to cooking liquid. 6. Serve with freshly grated parmesan cheese. |
