Turkey sausage and tortellini soup with tomatoes, carrots, and spinach. Ingredients:
1 tsp garlic powder |
1/3 cup onion, diced (or 6 green onions) |
14 oz sausage |
9 black olives, sliced |
2/3 cup bell peppers, red, yellow and green |
32 fl oz fat free, low sodium chicken broth |
32 fl oz water |
14 1/2 oz stewed tomatoes , chopped |
1/2 cup carrots, sliced thin |
16 oz cheese tortellini |
1/2 cup frozen spinach |
Directions:
1. Spray large skillet with non-stick cooking spray and warm over medium heat. 2. Add garlic, onion, and black olives; cook until onions are translucent. 3. Crumble sausage and add to skillet. Cook until brown. 4. Add chicken broth, water, stewed tomatoes, including juice, and baby carrots. Raise heat, bring to boil, and lower heat back to medium. Simmer for about 20 minutes or until carrots are soft. 5. Add tortellini. Raise heat and bring back to boil. Cook for 5 minutes. 6. Add spinach, cook for 2 minutes. Serve. |
