Fantastic, hearty soup that freezes well Ingredients:
1 lb italian sausage (casing removed) |
1 cup onion, chopped |
2 large garlic cloves, minced |
5 cups beef stock |
2 cups chopped tomatoes |
1 (8 ounce) can tomato sauce |
1 large zucchini, sliced |
1 large carrot, thinly sliced |
1 medium green pepper, diced |
1/2 cup dry red wine (optional) |
1 tablespoon basil |
1 tablespoon oregano |
8 -10 ounces cheese tortellini |
Directions:
1. In a stockpot, sauté sausage over medium-high heat (10 minutes). Pour off fat. Set aside. Add onion and garlic. Sauté for 5 minutes. Return sausage to pot. Add all other ingredients (except tortellini) and simmer for 40 minutes. Add tortellini and cook for approximately 8 minutes until tender. |
