From Betty Crockers Easy Summer Potlucks, these look simple and good. A large slice of watermelon makes a fun holder for these colorful kabobs. Ingredients:
24 tortellini, cheese-filled spinach, uncooked |
1/2 cup italian dressing |
12 medium shrimp, cooked, peeled, deveined |
12 small cherry tomatoes |
Directions:
1. Cook tortellini as directed on packaged; drain and cool. 2. Place dressing in shallow glass or plastic bowl. 3. Stir in tortellini, shrimp and tomatoes. 4. Cover and refrigerate 1 hour, stirring once to coat. 5. Drain tortellini mixture. 6. Thread tortellini, shrimp and tomatoes alternately on each of twelve 6-inch skewers. 7. Variation:. 8. For a meatless predinner treat, leave off the shrimp and use whole pittted ripe olives or small whole mushrooms. |
