There are so many ways to do a kabob... Ingredients:
2/3 c. oil and vinegar dressing |
3 tblsp. basil pesto |
2 c. cheese tortellini(i like fresh but frozen is ok) |
8 oz. cheddar or pepper jack, 1/2 in. cubes |
30 olives, pimiento stuffed and kalamata |
30 red and/or green pickled peppers |
15 6 inch wooden skewers |
Directions:
1. for marinade 2. in a medium bowl combine the vin. and oil and the pesto, set aside 3. Cook tortellini accordingly 4. drain, rinse, and drain again 5. on the skewers, alternately thread the tortellini, cheese cubes, olives 6. and peppers. 7. Brush with the marinade 8. allow to chill 3-4 hours. 9. if transporting, keep cold |
