Tortellini In Spinach Cream Sauce |

I've been trying to cook meals without meat more often lately and this is on the list of favorites....A nice green salad and chunk of bread and you've got a meal Ingredients:
1 lb. frozen cheese tortellini |
2 tbls. olive oil |
1/2 cup onion, chopped |
3 cloves of garlic, finely chopped |
1 10 oz. pkg. frozen spinach, thawed and drained |
1 cup diced tomatoes, fresh or canned (i use canned) |
1 1/2 tsp. dried basil (1/4 cup fresh, finely chopped) |
salt and pepper to taste |
1 cup whipping cream |
1/4 cup parmesan cheese |
additional parmesan cheese to garnish |
Directions:
1. Cook tortellini as directed on package 2. Drain, set aside 3. Heat oil in skillet 4. Add onion and garlic and cook until tender 5. Add spinach, tomato, basil, salt and pepper and cook for 5 minutes or so, stirring occasionally 6. Stir in whipping cream and cheese 7. Cook until just coming to boil 8. Reduce heat to low and add tortellini 9. Heat thoroughly 10. Garnish with additional Parmesan cheese |
