The new chicken soup you need when you are sick, high on the vitamins and easy to make if you have stock in the freezer. Ingredients:
2 cups chicken stock, homemade if at all possible |
3/4c frozen tortellini |
1 handful fresh spinach |
1 teaspoon parmiggiano reggiano, freshly grated |
1 teaspoon lemon zest |
1 teaspoon fresh lemon juice, amount a wedge worth |
salt and pepper |
Directions:
1. Heat the stock to a boil and cook the tortellini. 2. Put a handful of spinach in a soup bowl. Ladle the soup over top and squeeze in lemon and stir. 3. Grate cheese and zest on top, and add some freshly ground salt and pepper. Serve immediately. |
