Tortellini Broccoli Salad |

A pasta and fresh veggie salad that is easily doubled (or tripled) to take to a picnic or potluck. Ingredients:
1 7 oz pkg cheese filled tortellini (tri colored makes a pretty salad) |
1/2 cup sliced carrot |
2 cups broccoli flowerets |
2 green onions, sliced |
balsalmic dressing |
1/4 c balsalmic vinegar |
2 tbsp olive oil |
1 tsp dried basil, lightly crushed with heel of hand |
1/4 tsp paprika |
1/8 tsp salt |
1 clove garlic, crushed |
Directions:
1. Cook and drain tortellini, rinse well with cold water, drain. 2. Prepare dressing. 3. In large bowl toss vegetables and dressing. 4. Add pasta and gently toss until evenly coated. 5. Cover tightly and refrigerate at least 1 hour before serving. |
