Flavorful vegetarian dish; easy to prepare - can be main dish or side dish, and healthy too. Make ahead of time to enhance flavors! Ingredients:
1 pkg. (10 oz) frozen cheese tortellini |
2 cups broccoli florets |
1/2 cup red onion, sliced thin |
1 cup canned garbanzo beans, rinsed & drained |
1 cup canned red kidney beans or cannellini beans, rinsed & drained |
1 can pitted ripe olives, drained |
1 bottle (8 oz.) fat-free creamy italian salad dressing |
1/4 cup shredded parmesan cheese, divided |
1 tsp. dried oregano |
1 tsp. hot sauce |
12 cherry tomatoes, halved |
Directions:
1. Prepare tortellini according to package directions 2. drain & place in serving bowl. Add broccoli, onions beans & olives. 3. Combine the salad dressing, 2 TLBS. parmesan cheese, oregano & hot sauce. Pour over salad and toss gently. Cover & refrigerate for at least 8 hours. 4. Just before serving, add tomatoes & sprinkle with remaining Parmesan cheese. |
