TRIED AND TRUE TORTELLINI AND ARTICHOKE PASTA SALAD This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clinton Estate in Mesquite, Texas in 1988.
Ingredients:
10 ounce package cheese stuffed tortellini
4 whole marinated artichoke hearts
3 tablespoons roasted red pepper diced
4 tablespoons mayonnaise
1 tablespoon spicy mustard
1 tablespoon parmesan cheese grated
2 tablespoons chopped basil
2 tablespoons chopped parsley
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Cook tortellini then rinse and drain well.
2. Toss with 1 tablespoon of the marinated artichoke liquid to keep from sticking together.
3. More may be added for flavoring if desired.
4. Drain artichokes then cut into chunks.
5. Combine remaining ingredients and toss gently in a large bowl to combine.
6. Refrigerate if not served immediately.
