Mazorca is the name that we use for the corn in Colombia… This “Torta de Mazorca” is very Colombian and from our ethnics foods … made with fresh kernels of corns and cheese that make this very sweet and a little bit salty… we like to warm it before to serve. Ingredients:
2 cups of milk |
2 cup of flour |
1 teaspoon of baking powder |
1/2 tsp. salt |
3 cups. fresh kernels of corn |
250 gr. butter |
2 1/2 cups of sugar |
5 large eggs |
250 gr. grated farmer cheese ( mzarella canbe used ) |
1/2 cup of currants |
Directions:
1. Blend the fresh kernel of corn in a blender with milk. and set aside. 2. In a large bowl, mix the butter, sugar, add eggs, flour, baking powder, salt, the corn mix, currants and finnally add the grated cheese. 3. Spread the batter in the prepared pan (Greased and dusted wih flour). Bake until just springy to the touch and toothpick inserted in the center comes out with a few moist crumbs attached, about 70 minutes. |
