From Weight Watchers - 4pts per serving. A light and refreshing hot weather dessert that's super easy to make. Ingredients:
.5 cup part-skim ricotta cheese |
3 t low fat cream cheese |
2 t powdered sugar |
.5 tsp orange zest |
3/4 cup lite whipped topping |
2 cups strawberries, hulled and sliced (reserve 6 whole berries for garnish) |
3 t sugar |
1 oz orange-flavored liqueur (i've left this out when didn't have any on hand) |
2 t orange juice |
3 oz ladyfingers, separated |
Directions:
1. In a food processor, puree ricotta, cream cheese, confectioner's sugar, and orange zest. 2. Transfer to a medium bowl and fold in whipped topping. 3. In the same food processor (no need to clean it), puree 1 cup sliced strawberries, the granulated sugar, liqueur, and orange juice. 4. Spoon 1 T of the strawberry puree into each of 6 wine glasses. 5. Top each with 2 ladyfinger halves. 6. Spoon another T of strawberry puree over the ladyfingers 7. Top with sliced strawberries 8. Then cheese mixture. 9. Top with 2 more ladyfinger halves. 10. Spoon on more puree, berries, and cheese mixture. 11. Cover each glass with plastic wrap and refrigerate overnight. 12. Garnish each with a whole strawberry. |
