Less than 300 calories for a hearty (431 g) serving! Ingredients:
16 oz whole kernel corn, drained |
3 chopped medium potatoes |
1 chopped onion |
1 cup chopped celery |
1 tbsp minced garlic |
1/2 teaspoon salt |
1 tsp ground pepper |
1/2 tsp crushed red pepper (optional) |
2 cups (trader joe's) chicken broth or vegetable broth |
2 cups non fat milk |
1/4 cup icbinb! light (soft) |
1 tbsp corn starch |
1 tbsp minced garlic |
Directions:
1. Combine first 9 ingredients in slow cooker. 2. Cover and cook on low for 7 hours. (for shorter cooking time, boil potatoes for 5 mins before placing in slow cooker. then slow cook for 1 1/2 hour) 3. Puree in a blender or food processor, if desired, then return to pot. 4. mix together milk, butter and corn starch until no lumps. 5. Stir into soup mixture and add the rest of garlic. 6. Cover and cook on HIGH about 45 minutes longer. |
