Too Easy Granola Bars (Muesli Bars) |

This is a regular in my kids' lunch boxes. I don't understand why people buy muesli bars when they are so fast and cheap to make from scratch. Ingredients:
2 cups rolled oats |
1/2 cup brown sugar |
1/2 cup wheat germ |
1/2 teaspoon cinnamon |
1 cup flour |
1/2 cup honey |
1 egg, lightly beaten |
1/2 cup vegetable oil |
2 teaspoons vanilla |
sultanas, apricots, dates (your choice, chop first and optional) or fig (your choice, chop first and optional) |
Directions:
1. In a large bowl mix the rolled oats, brown sugar, wheat germ, cinnamon, and flour; stir. 2. In large measuring jug add the honey, egg, vegetable oil, and vanilla; mix. 3. Make a well and add the wet to the dry and mix like mad. 4. Generously grease an 18x28cm (9x13 inch) tray. 5. Pour in mixture; press with your fingertips. 6. Bake at 175 degrees Celsius or 350 degrees Fahrenheit for 30 to 35 minutes (or until the sides are golden). 7. Cool for 5 minutes. 8. Slice into even fingers while warm (it will be too hard once cold). 9. Cool in the baking tin. 10. Keep in a well sealed jar for up to 5 days. |
