I got this granola recipe from a friend. You can change up the type of nuts (we like almonds and pistachios) and dried fruit (cranberries and papaya). We usually leave out the chocolate chips, but peanut butter chips would be great too!
Ingredients:
5 cups oats
1 cup mixed nuts
1/2 cup shredded coconut, unsweetened
1/2 cup oil, vegetable or 1/2 cup olive oil
1/2 cup honey or 1/2 cup maple syrup
1/4 cup brown sugar (optional)
1 -3 tablespoon sesame seeds (optional)
1/2 cup dried fruit
1/4 cup chocolate chips (optional)
Directions:
1. Preheat oven to 350*.
2. Stir dry and wet ingredients until evenly moistened - all ingredients except for dried fruit and chocolate chips.
3. Pour mixture into pyrex.
4. Bake for 10 minutes, stir.
5. Bake another 15 minutes, or until golden.
6. Mix in dried fruit and chocolate chips.
