Got this recipe out of o cookbook that was compiled for a friend of mine. Very good, simple soup. Ingredients:
1 cube butter |
1 large onion diced |
1/2 c flour |
1 quart 1/2 & 1/2 |
4 large potatoes baked and then diced (leave peels on) |
1/2 tsp salt |
1/2 tsp basil |
1/4 tsp pepper |
1/4 tsp tabasco |
4 small cans chicken broth |
Directions:
1. Melt butter and add onion 2. saute until translucent 3. Add flour and cook 5 minutes 4. slowly add chicken stock 5. simmer for 10 minutes 6. add half and half and all spices 7. simmer for 10 more minutes 8. Add potatoes 9. Cook until thickened and heated through. 10. Garnich with crumbled bacon and shredded cheese of your choice if desired. |
